Easy “Paleo” Chicken Strips-kid approved

Healthy "Paleo" Chicken Fingers
Serves 4
This recipe is better than any chicken finger recipe I've ever had. It's full of flavor, low carb and healthy. I modified the recipe a little by using spices we like. I used sazon, garlic powder, oregano and adobo in the almond flour coating. Then I followed the recipe. It was sooooo good. This was for made for my seven year old daughter who is very picky.

Ingredients
  1. 1 lb chicken tenders (or skinless chicken breast, cut into strips)
  2. 1 egg, beaten (egg whites work just as well)
  3. ½ cup Almond Meal
  4. ½ cup panko breadcrumbs* (optional-if you add this it is no longer paleo, but it makes it crunchy)
  5. ¾ tsp Adobo
  6. ¼ tsp garlic powder
  7. ½ tsp oregano
  8. 1 packet Sazon
Instructions
  1. 1. Preheat oven to 425F. Line a large baking sheet with parchment paper.
  2. 2. Combine almond meal with spices on a plate or shallow dish. Place beaten egg in a separate shallow dish.
  3. 3. Dry chicken with paper towel. Dip in egg then dip in almond meal mixture, coating all sides. Place on baking sheet. Repeat until all chicken tenders are coated.
  4. 4. Bake for 16-18 minutes, turning once in the middle of baking, until completely cooked (interior temperature should read 180F).
Notes
  1. ½ cup panko breadcrumbs* (optional-if you add this it is no longer paleo, but it makes the chicken fingers crunchy).
  2. When I get chicken breast, sometimes they are too thick. So I slice the chicken breast lengthwise (butterfly the chicken breast) and then cut it into strips.
